Cabernet Sauvignon is the global benchmark red — late-ripening, thick-skinned, and reliably tannic. In Bordeaux it leads gravelly Left Bank blends, alongside Merlot and Cabernet Franc. In Napa, Coonawarra, and Maipo it stands alone as the headline grape. Cool sites give green pyrazine notes (bell pepper, herb); warm sites yield blackcurrant, cedar, graphite, and vanilla from oak. Long aging on cork is the norm for serious bottles.
