Riesling is the great aromatic white, defined by piercing acidity and an aroma profile of lime, apricot, and wet stone. It runs the full sweetness spectrum from bone-dry Alsace and Clare Valley to the famous off-dry Mosel Kabinett ladder, ending with botrytized TBA. High-acid backbone makes it one of the longest-ageing white wines.
